Ingredients for Fragrant mixed herb and flatbread salad (Domaaj)
4–5 pieces persian flatbread (or toasted tortillas or pitta bread)
60 g walnuts, roughly chopped
100 g feta, crumbled
1 small bunch mint, roughly chopped
1 small bunch basil, roughly chopped
1 small bunch tarragon, roughly chopped
45 ml pomegranate seeds, to garnish
30 ml balsamic vinegar
45 ml extra-virgin olive oil
1 g golpar (optional)
3 g sea salt
3 g black pepper
How to make Fragrant mixed herb and flatbread salad (Domaaj)
Cut the flatbread into small jagged pieces using a pair of scissors, then place them in a large bowl.
Toast the walnuts in a small frying pan over medium heat for 2 minutes until fragrant.
Add the toasted walnuts to the bowl, along with the crumbled cheese and chopped herbs.
To make the dressing, whisk together the balsamic vinegar, olive oil, and golpar (if using) with the salt and pepper.
Drizzle the dressing over the salad, then use your hands to mix everything together thoroughly.
Leave the salad for 10 minutes to allow the flavours to soak into the bread, then taste and adjust the seasoning as needed.
Just before serving, garnish the salad with a generous sprinkling of pomegranate seeds.
