Ingredients for Creamy pasta with crispy mushrooms

  • 60 ml extra-virgin olive oil

  • 450 g mixed mushrooms, torn into bite-size pieces (such as maitake, oyster, crimini, and/or shiitake)

  • kosher salt

  • 2 medium shallots, finely chopped

  • 450 g spaghetti or bucatini

  • 120 ml double cream

  • zest and juice of ½ lemon

  • 40 g finely chopped parsley

  • 30 g unsalted butter, cut into pieces

  • 15 g Parmesan, finely grated (about 40 g), plus more for serving

  • freshly ground black pepper

How to make Creamy pasta with crispy mushrooms

  1. Heat 30 ml of oil in a large pot over medium-high heat. Cook half of the mushrooms in a single layer, undisturbed, until the edges are brown and starting to crisp, about 3 minutes. Toss the mushrooms and continue to cook, stirring occasionally, until all sides are brown and crisp, about 5 minutes more. Using a slotted spoon, transfer the mushrooms to a plate and season with salt. Repeat with the remaining oil, mushrooms, and additional salt.

  2. Reduce the heat to medium-low and return all of the mushrooms to the pot. Add the shallots and cook, stirring often, until the shallots are translucent and softened, about 2 minutes.

  3. Meanwhile, cook the pasta in a large pot of boiling salted water, stirring occasionally, until very al dente, about 2 minutes less than the package instructions.

  4. Using tongs, transfer the pasta to the pot with the mushrooms. Add the single cream and 240 ml of the pasta cooking liquid. Increase the heat to medium, bring to a simmer, and cook, tossing constantly, until the pasta is al dente and the liquid has slightly thickened, about 3 minutes.

  5. Remove the pot from the heat. Add the lemon zest, lemon juice, parsley, butter, 15 g of Parmesan, and plenty of black pepper, then toss to combine. Taste and season with more salt if needed.

  6. Divide the pasta among bowls and top with additional Parmesan.
