Ingredients for Cinnamon toast bites
450 g challah bread, cut into 2.5 cm cubes
225 g unsalted butter, softened
200 g caster sugar
15 ml ground cinnamon
5 ml vanilla extract
0.5 g kosher salt
How to make Cinnamon toast bites
Preheat the oven to 190°C (fan 170°C). Arrange the bread in a single layer on a baking tray lined with parchment paper. Bake for 18–20 minutes, tossing halfway through, until completely dried out.
Meanwhile, melt the butter in a small saucepan over medium heat. Whisk in the sugar and 120 ml of water, and cook until the sugar has dissolved. Stir in the cinnamon, vanilla, and salt.
Transfer the syrup to a large bowl, add the dried bread, and toss quickly until coated. Using a slotted spoon, return the bread cubes to the baking tray, discarding any remaining syrup.
Bake the bread for an additional 10 minutes, tossing halfway through, until the sugar is slightly caramelised. Allow to cool slightly.
The bites can be prepared up to 1 day in advance. Store them in an airtight container at room temperature.
