Ingredients for Any berry galette
10 g cornflour
5 ml finely grated lemon zest
5 ml sea salt
5 ml freshly ground black pepper (optional)
70 g caster sugar, plus more for sprinkling
900 g strawberries or other berries, hulled, halved if large
15 ml fresh lemon juice
5 ml vanilla extract
extra-flaky pastry dough
15 ml double cream
softly whipped cream or vanilla ice cream (for serving; optional)
How to make Any berry galette
Preheat the oven to 200°C (fan) or 220°C (conventional).
In a medium bowl, combine the cornflour, lemon zest, salt, pepper (if using), and 75 g of sugar.
Toss the mixture with your hands to combine, then add the strawberries and toss to coat.
Add the lemon juice and vanilla, then toss gently to mix.
Arrange the berry mixture in the centre of the chilled dough (still on the parchment on the baking tray) and spread it out evenly, leaving a 7.5 cm border.
Fold the edges of the dough up and over the fruit, pleating as needed; be careful not to tear the dough. If it does tear, patch it with dough scraps and pinch to seal.
Pour the cream into a small bowl and brush it all over the dough.
Sprinkle the remaining sugar evenly over the dough.
Place the galette in the oven and immediately reduce the heat to 190°C (fan) or 210°C (conventional).
Bake for 45–50 minutes, rotating halfway through, until the crust is deep golden brown, the berries are softened, and the juices are bubbling.
Allow to cool for 2 hours.
Serve with whipped cream or ice cream, if desired.
