3-Ingredient Cheese Sauce

This simple 3-ingredient cheese sauce is a versatile vegetarian staple that delivers a rich, velvety texture in minutes. By using evaporated milk and a touch of cornflour, you can achieve a stable, professional finish that won't split or become oily. It is the perfect speedy solution for those seeking a comforting dip without the faff of making a traditional flour-based roux on the hob.

Ideal for casual entertaining or a quick midweek treat, this homemade sauce can be customised with a kick of chilli for a classic Tex-Mex flavour. Serve it warm alongside crunchy tortilla chips, or pour it generously over steamed cauliflower for a quick and cheesy side dish. This reliable recipe is a must-have for anyone looking for maximum flavour with minimal effort.

  • 1 tablespoon plus 1 teaspoon cornflour

  • 240ml evaporated milk

  • 1 (275g) can Rotel diced tomatoes and green chillies, drained, squeezed dry

  • Hot sauce, to taste (optional)
