Ingredients for Za'atar spice blend

  • 120 g picked fresh za’atar or oregano leaves (or 45 g dried oregano)

  • 45 g dried marjoram

  • 45 g toasted sesame seeds

  • 12 g dried thyme

  • 15 g ground sumac

  • 5 g fine sea salt

How to make Za'atar spice blend

  1. Arrange fresh za'atar or oregano on a towel-lined plate.

  2. Microwave in 15-second intervals, stirring between each interval, until the herbs are dry and crumbly, about 2–2.5 minutes.

  3. Crumble the leaves by hand or use a spice grinder until they are almost fine, resembling dried herbs.

  4. Combine the crumbled herbs in a medium bowl with the marjoram, sesame seeds, thyme, sumac, and salt.

  5. Store the mixture in an airtight container for up to 3 months.
