Ingredients for Strawberry and watercress salad
1/2 medium rhubarb stalk, very thinly sliced on a diagonal
170 g strawberries, hulled, halved, sliced if large
30 ml fresh lemon juice
10 ml honey
1 bunch watercress, tough stems removed
120 ml basil leaves
120 ml coriander leaves with tender stems
2 spring onions, thinly sliced on a diagonal
kosher salt, to taste
crushed red pepper flakes, to taste
30 ml extra-virgin olive oil
poppy seeds, for serving
How to make Strawberry and watercress salad
Toss the rhubarb, strawberries, lemon juice, and honey together in a medium bowl until well combined.
Arrange the watercress, basil, and coriander on a serving platter.
Scatter the scallions over the herbs and season with salt.
Sprinkle with red pepper flakes to taste.
Spoon the berry mixture and its juices over the herbs, then drizzle with oil.
Finish by sprinkling poppy seeds on top.
