Ingredients for Better than celery juice

  • 3 granny smith apples, scrubbed, coarsely chopped

  • ½ bunch parsley, coarsely chopped (leaves and stems)

  • 5 celery stalks, with leaves attached, coarsely chopped, plus more for serving

  • 60 ml apple cider vinegar

  • pinch of kosher salt

  • 1.25 ml freshly ground black pepper, plus more for serving

How to make Better than celery juice

  1. Purée the apples, parsley, and 5 celery stalks with 750 ml of water in batches using a blender.

  2. Strain the mixture through a fine-mesh sieve into a pitcher, gently pressing with a spoon to extract as much liquid as possible. Alternatively, juice the apples, parsley, and celery before mixing with the remaining water.

  3. Stir in the vinegar, salt, and ¼ tsp pepper, then add additional chopped celery stalks as desired.

  4. To serve, pour 120 ml of the juice into an ice-filled glass and sprinkle with pepper.
