Ingredients for Seedy power sprinkle

  • 1 large egg white

  • 30 ml extra-virgin olive oil

  • 30 ml honey

  • 15 ml Aleppo-style pepper (optional)

  • 10 g kosher salt

  • 120 g sunflower seeds

  • 80 g chia seeds

  • 80 g flaxseeds

  • 80 g raw sesame seeds

How to make Seedy power sprinkle

  1. Whisk the egg white, oil, honey, pepper (if using), salt, and 15 ml of water in a medium bowl until combined.

  2. Add the sunflower seeds, chia seeds, flaxseeds, and sesame seeds, then stir to coat the seeds evenly.

  3. Let the mixture sit for about 30 minutes, or until the liquid is absorbed.

  4. Preheat the oven to 160°C (fan) or 170°C (conventional).

  5. Spread the seed mixture in an even layer on a rimmed baking tray.

  6. Bake for 20–25 minutes, stirring very gently after 10 minutes to encourage the mixture to form small clusters, until golden brown and crisp.

  7. Allow to cool completely on the tray.

Do Ahead: The sprinkle can be made up to 2 weeks in advance. Store in an airtight container at room temperature.
