This salmon and corn chowder is a sophisticated take on a classic coastal favourite, offering a satisfying and high-protein meal that feels both indulgent and nourishing. The base of the soup combines tender red potatoes and sweet corn kernels with a rich, creamy broth, providing a beautiful contrast to the delicate flakes of fresh salmon that are gently poached within the liquid. Brightened with a splash of lemon and aromatic dill, it is a well-balanced dish that highlights the natural sweetness of the seafood.
Ideal for a comforting weekend lunch or an impressive evening starter, this homemade chowder is surprisingly simple to prepare. Using a single large casserole dish makes for an easy clean-up, while the addition of spring onions and celery provides a subtle savoury depth. Serve this hearty soup with a slice of crusty sourdough or soda bread to soak up the delicious creamy base.

How to make Salmon and Corn Chowder
Back to contentsPrepare a campfire or wood-fired grill for cooking with indirect heat.
Heat the olive oil in a large, heavy saucepan or Dutch oven over medium heat and sauté the celery for 3 minutes. Add the potatoes, salt, and pepper and cook, stirring occasionally, for 5 minutes. Stir in the spring onions and corn and add 475ml the stock. Bring to a boil, then reduce the heat, cover, and simmer until the potatoes are almost tender, about 15 minutes.
Add the cream and simmer, uncovered, until the potatoes are tender, 5 to 7 minutes. Stir in the salmon and lemon zest and simmer gently until the salmon is just cooked through, 3 to 4 minutes. Add more stock as needed and lemon juice to taste. Taste and adjust the seasoning.
Serve in bowls, topped with the dill.
