Ingredients for Habanero BBQ shrimp

  • 240 g apricot preserves

  • Juice of 2 limes, plus wedges for serving

  • 1 habanero pepper, deseeded, small diced

  • 30 ml soy sauce

  • 2 small garlic cloves, finely grated

  • 5 ml grated fresh ginger

  • 900 g extra-large prawns, peeled and deveined

  • vegetable oil, for brushing

How to make Habanero BBQ shrimp

  1. In a small bowl, mix together the apricot preserves, lime juice, habanero, soy sauce, garlic, and ginger until well combined.

  2. Transfer half of the sauce to a large zip-top bag and add the shrimp. Seal the bag and refrigerate for 10 minutes to marinate.

  3. Preheat the grill to high or heat a large grill pan over high heat. Brush the grates or the pan with oil to prevent sticking.

  4. Soak bamboo skewers in water alongside a wedge of lime to prevent burning during grilling.

  5. Thread 5 shrimp onto each bamboo or metal skewer, discarding the marinade in the bag.

  6. Grill the skewers for 4–5 minutes, turning until charred on both sides. Take care not to overcook the shrimp.

  7. Serve the skewers with the remaining sauce on the side for dipping and garnish with lime wedges.
