Ingredients for Crunchy gluten-free chicken tenders
240 g gluten-free rice chex cereal
120 g gluten-free flour (e.g. Amy's Gluten-Free Mix),
5 ml salt,
5 ml black pepper
2 large eggs
450 g chicken tenderloins
720 ml vegetable oil
How to make Crunchy gluten-free chicken tenders
Crush the Chex using your hands in a large bowl, then add the gluten-free mix, salt, and pepper. Pour this mixture into a large roasting pan.
In a separate large bowl, whisk the eggs, then add the chicken pieces, ensuring they are well coated.
Heat the oil in a large, heavy frying pan over medium heat (approximately 180 °C). Place a brown paper bag on the counter nearby for draining the chicken after frying.
Dredge each piece of chicken in the flour coating, pressing the coating onto the chicken to create a crunchy texture. Fry one piece at a time, removing it from the oil after 3–4 minutes, or until golden brown. Place the fried chicken on the brown paper bag. Repeat the process, frying no more than four tenders at a time.
Serve the chicken with mashed potatoes and green beans.
