Big-Batch Seasoned beef mince

This versatile big-batch seasoned minced beef is an essential staple for any organised kitchen. By browning the meat in stages and using a high heat, you achieve a deep, savoury flavour that serves as the perfect high-protein base for countless dishes. Whether you are planning to whip up a quick bolognese, a spicy chilli, or a simple cottage pie, having this pre-prepared mince in your fridge or freezer saves significant time during busy weeknights.

Crafted with meal-preppers in mind, this recipe focuses on quality searing to ensure the beef remains succulent rather than boiled. It is an excellent way to manage your weekly nutrition, providing a lean yet flavourful foundation that pairs beautifully with fresh vegetables or whole grains. Simply portion it out after cooling for a convenient, homemade head start on your healthy eating goals.

Ingredients for Big-Batch Seasoned beef mince

  • 2 cucharadas de aceite de oliva virgen extra

  • 1.8kg beef mince chuck (20% fat)

  • 4 teaspoons kosher salt, divided

Heat oil in a large heavy pot or Dutch oven over high. Add one-quarter (450g) of the beef mince in an even layer, using your hands to break up large pieces and leaving some gaps to encourage browning (instead of steaming). Season with 1 teaspoon salt. Cook, undisturbed, until bottom is deeply browned, about 3 minutes. Turn and break into smaller pieces and cook until the other side is browned, 2–3 minutes. Push over to one side of pot. Repeat with another one-quarter (450g) of beef mince, seasoning uncooked meat with 1 teaspoon salt. Using a wooden spatula or spoon, break meat into smaller pieces and stir to combine.

Season remaining 900g beef with 2 teaspoons salt, then add to pot and cook over medium heat, stirring often and breaking into small pieces, until all meat is cooked through and most (but not all) of the liquid is evaporated from bottom of pot, 12–15 minutes. Let cool to room temperature.

Beef mince can be made 5 days ahead. Divide among airtight containers and chill, or freeze up to 3 months.
