Ingredients for Watermelon salad with radishes and mint
kosher salt, to taste
freshly ground black pepper, to taste
1 bunch red radishes, cut into 3 mm slices
30 ml red wine vinegar
20 ml extra-virgin olive oil
½ red onion, cut into thin slivers
2 kg watermelon (¼ of a large melon), rind removed, flesh cut into 2.5 cm cubes
30 g torn mint leaves
How to make Watermelon salad with radishes and mint
Dissolve a spoonful of salt in a large bowl of ice water. Let the radishes sit in the salted ice water for a few minutes to crisp.
In a large bowl, whisk together the vinegar, oil, and 1 teaspoon of salt.
Drain the radishes and add them to the bowl along with the onion and watermelon.
Gently toss the ingredients with your hands to coat evenly.
Spread the mixture on a serving platter, then grind pepper over the top and finish with fresh mint.
