Ingredients for Creole Caesar salad with corn bread croutons

  • 240 g fried okra

  • 2 heads romaine lettuce, leaves separated

  • 150 g cooked fresh corn kernels, chilled

  • 300 g cubed corn bread, toasted

  • 75 g sliced grape tomatoes

  • 75 g sliced seedless cucumber

  • 40 g sliced red onion

For the dressing:

  • 160 ml extra-virgin olive oil

  • 3 garlic cloves, peeled

  • 30 ml chopped onion

  • 30 ml red wine vinegar

  • ½ roasted red pepper, deseeded

  • 15 g finely chopped celery

  • 5 g light brown sugar

  • 1 g cayenne pepper

  • 30 ml mayonnaise

  • 25 g grated parmesan cheese

  • Salt and pepper to taste

How to make Creole Caesar salad with corn bread croutons

  1. Place half of the fried okra in a large bowl. Add the romaine, sweetcorn, cornbread, tomatoes, cucumber, and onion. Pour in the dressing and toss until everything is well coated.

  2. Divide the salad among six serving plates and top each plate evenly with the remaining okra. Serve immediately.

  3. In a small saucepan, combine the oil, garlic, and onion. Cook over low heat for about 15 minutes, or until the garlic and onion are golden and tender.

  4. Using a slotted spoon, transfer the garlic and onion to a food processor and reserve the oil in the pan.

  5. Add the vinegar, bell pepper, celery, sugar, cayenne, mayonnaise, Parmesan, and a pinch of salt and black pepper to the food processor. Pulse until smooth.

  6. With the machine running, drizzle the reserved oil in a thin stream and process until emulsified. Taste and adjust the seasoning with salt and pepper as needed.

  7. Use the dressing immediately, or store it in an airtight container in the refrigerator for up to 1 week.
