Ingredients for Tropi-Cobb salad
5 ml ground coriander
5 ml ground cumin
2.5 ml ground turmeric
2.5 ml crushed red pepper flakes
105 ml extra-virgin olive oil, divided
6 garlic cloves, lightly crushed
4 skinless, boneless chicken thighs, cut into 2 cm pieces
kosher salt
30 ml fresh lime juice
2 ripe avocados, sliced
2 small ripe mangoes, sliced
¼ red onion, thinly sliced
180 g torn Little Gem or green lettuce leaves
120 g cherry tomatoes, halved
flaky sea salt
mild red pepper flakes
basil and/or mint leaves (for serving)
How to make Tropi-Cobb salad
Mix the coriander, cumin, turmeric, and red pepper flakes in a small bowl; set aside.
Heat 30 ml of oil in a large non-stick frying pan over medium heat.
Add the garlic and cook, tossing occasionally, until golden brown all over, about 5 minutes.
Increase the heat to medium-high.
Season the chicken with sea salt and add it to the frying pan.
Cook the chicken, tossing occasionally, until golden brown and nearly cooked through, about 3 minutes.
Remove the frying pan from the heat and sprinkle the reserved spice mix over the chicken.
Toss several times to coat the chicken, then let it sit in the frying pan until fully cooked, about 1 minute longer.
Transfer the chicken to a plate and let it cool slightly.
In a small bowl, whisk together the lime juice and the remaining 75 ml of oil; season the dressing with sea salt.
Arrange the lettuce, chicken, avocado, mango, onion, and tomatoes on a platter.
Drizzle the dressing over the salad.
Sprinkle with sea salt and red pepper flakes, and scatter the herbs over the top.
