Ingredients for Big flavor broccoli

  • 450 g broccoli (about 1 large or 2 medium heads)

  • 75 ml extra-virgin olive oil, divided

  • salt, to taste

  • 1 small red onion, cut lengthwise into 1.5 cm thick slices

  • 4 garlic cloves, sliced

  • 6 oil-packed anchovy fillets

  • 28 g parmesan, finely grated (about 30 g)

  • lemon wedges (for serving)

How to make Big flavor broccoli

  1. Preheat the oven to 200°C (fan) / 220°C (conventional).

  2. Trim the very bottom, woody part of the broccoli stem. Peel away the tough outer layer from the stem, starting from the florets down to the end of the stalk.

  3. Starting from the stem end, cut the broccoli at a 45° angle into 2 cm thick slices until you reach the florets. Break the florets apart with your hands into bite-sized pieces to minimise mess.

  4. Heat 45 ml of oil in a large heatproof frying pan over medium-high heat until shimmering.

  5. Add the broccoli to the pan and season with salt. Cook, tossing occasionally, until the broccoli is bright green and lightly charred, about 3 minutes. Transfer to a plate and wipe out the frying pan.

  6. Heat the remaining 30 ml of oil in the same frying pan over medium heat. Add the onion and garlic, stirring often, until the onion begins to soften, about 3 minutes.

  7. Add the anchovies and cook, breaking them apart with a spoon until they are broken down and the garlic begins to turn golden around the edges, about 2 minutes.

  8. Return the broccoli to the frying pan and toss to coat with the oil. Transfer to the oven and roast, tossing once, until the broccoli is browned and tender, 20–25 minutes. Remember to wrap the handle of the frying pan with a towel as it will be very hot.

  9. Scatter grated Parmesan over the hot broccoli. Divide among plates and serve with lemon wedges on the side.
