Prawns Salad with Cucumber and Fennel

This vibrant prawn salad with cucumber and fennel is a wonderfully fresh choice for a light lunch or a sophisticated starter. The combination of succulent prawns and the crisp, aniseed notes of sliced fennel creates a sophisticated flavour profile that is naturally low in carbohydrates. Using lemon zest and fresh dill provides a bright, citrusy lift that perfectly complements the seafood without the need for heavy dressings.

As a diabetes-friendly recipe, this dish focuses on high-quality protein and hydrating vegetables, making it as nourishing as it is delicious. It is an ideal option for seasonal entertaining or meal preparation, as the flavours develop beautifully when left to marinate in the fridge for a few hours. Serve it chilled on its own or alongside a light green salad for a heart-healthy, refreshing meal.
