Crispy Salt and Pepper Chicken with Caramelized Fennel and Shallots

This crispy salt and pepper chicken offers a sophisticated take on a tray-bake dinner, combining succulent poultry with the delicate, aniseed notes of roasted fennel. By using potato starch instead of traditional flour, the chicken achieves a superior crunch while remaining a lighter, diabetes-friendly option. This savoury dish relies on a blend of white and black peppers to provide a gentle, warming heat that perfectly complements the sweetness of the caramelised shallots.

Ideal for an easy midweek meal or a relaxed weekend lunch, this all-in-one roast is both nutritious and satisfying. The addition of smashed garlic and fresh parsley brings a vibrant depth of flavour without the need for heavy sauces. Serve this wholesome main with a side of steamed greens or a light watercress salad to keep the meal balanced and fresh.
