This vibrant summer corn sauté is a celebratory vegetarian side dish that captures the essence of the season. By using fresh kernels cut straight from the cob, the dish retains a satisfying crunch and natural sweetness that shop-bought tinned versions simply cannot match. The addition of toasted cumin seeds and buttery sautéed shallots provides a savoury backbone that perfectly balances the bright, golden corn.
Packed with an abundance of fresh basil, coriander, and tarragon, this versatile dish is ideal for garden parties or as a light accompaniment to grilled mains. The mixture of soft green herbs adds a fragrant, leafy freshness, making it a nutritious and beautifully colourful addition to any table. Serve it warm to allow the herb oils to fully infuse the buttery corn.
