This vibrant roasted asparagus dish offers a delightful contrast of textures, combining tender seasonal spears with a crisp sesame-and-panko coating. The mayonnaise base ensures the breadcrumbs adhere perfectly while keeping the vegetable succulent, while the aromatic ginger and soy provide a deep savoury flavour. It is an excellent way to elevate a simple green vegetable into a sophisticated vegetarian starter or a standout side dish for a weekend dinner party.
Quick to prepare and visually striking, this recipe fits perfectly into a modern healthy diet. The punchy soy-ginger drizzle adds a refreshing acidity that cuts through the richness of the toasted sesame seeds. Serve these golden spears immediately while they retain their crunch, perhaps alongside grilled tofu or steamed jasmine rice for a light, Japanese-inspired meal that is both nutritious and satisfying.
