Potato and Pea Salad with Chive Aïoli

This vibrant potato and pea salad with chive aïoli is a sophisticated twist on a classic vegetarian side dish. By using small red-skinned new potatoes and a punchy homemade garlic dressing, it offers a wonderful contrast of textures and bright, herbaceous flavours. The addition of crisp celery and sweet garden peas makes it a refreshing choice for outdoor dining, providing a much-needed lift to the traditional creamy salad.

Ideal for summer barbecues or as part of a weekend spread, this recipe is designed for convenience as it can be prepared a day in advance. Chilling the salad allows the garlic, mustard and fresh chives to infuse properly, resulting in a deeper savoury profile. Serve it alongside grilled vegetables or crusty bread for a simple yet satisfying seasonal meal.
