This classic matzo brei is a staple of Jewish home cooking, offering a comforting and versatile vegetarian dish that is particularly popular during Passover. By soaking the matzo before frying it with seasoned eggs, you create a texture that is wonderfully crisp on the outside while remaining tender in the middle. It is a humble yet deeply satisfying breakfast that provides a perfect canvas for both sweet and savoury flavours.
Quick to prepare and requiring only a handful of larder essentials, these golden pancakes are ideal for a busy morning or a lazy brunch. While many enjoy them simply with a sprinkle of salt, they are equally delicious served with a dollop of strawberry jam, a drizzle of honey, or even a side of soured cream and chives. It is a protein-rich, homemade meal that the whole family will appreciate.

2 large eggs
salt
pepper
2 tablespoons vegetable oil
How to make Matzo Brei
Back to contentsBreak 2 sheets of matzo into 1/2" pieces; place in a medium bowl. Cover with very hot tap water. Let stand for about 30 seconds, then drain. Beat 2 large eggs in another medium bowl; season with salt and pepper. Add drained matzo; mix until combined and a wet batter forms. Heat 2 tablespoons vegetable oil in a large skillet over medium-high heat. Spoon scant 1/4-cupfuls of batter into skillet, making 4 pancakes. Fry, turning once, until golden and just cooked through, about 1 minute per side. Serve with jam, syrup, or whatever the hell you'd like. These rock.
