The combination of fragrant mixed herbs, salty feta, and sweet peppers provides a wonderful balance of textures, while the toasted walnuts add a satisfying earthy crunch. It is an ideal choice for a light seasonal lunch or a colourful side dish to accompany grilled vegetables or crusty sourdough bread.

Ready in just a few minutes, this healthy salad relies on high-quality pantry staples like jarred peppers and herb-infused oil to create a deep, savoury flavour profile with minimal effort.
