Heirloom Tomato and Burrata Cheese Salad

This heirloom tomato and burrata salad is a celebration of fresh, seasonal produce. By choosing a variety of heritage tomatoes, you can create a beautiful array of colours and a complex balance of sweetness and acidity. The tomatoes are macerated in high-quality olive oil and dried oregano, which draws out their natural juices to form a fragrant dressing that pairs perfectly with the rich, indulgent centre of the burrata cheese.

As a sophisticated vegetarian starter or a light lunch, this dish is wonderfully simple to prepare. It relies on the quality of its ingredients, making it an excellent choice for summer entertaining or a relaxed weekend alfresco meal. Serve with plenty of crusty sourdough bread to mop up the herb-infused juices and creamy cheese for the ultimate Mediterranean-inspired experience.
