Grilled Corn with Honey-Ancho Chilli Butter

This vibrant vegetarian side dish elevates the classic corn on the cob with a sophisticated blend of sweet and smoky flavours. The natural sweetness of the grilled corn is perfectly balanced by a rich, homemade butter infused with ancho chilli, cumin and a touch of honey. As the spiced butter melts into the golden, charred kernels, it creates a savoury coating that is both comforting and deeply aromatic.

Ideal for summer barbecues or as a colourful accompaniment to a Sunday roast, this recipe is incredibly simple to prepare. The ancho chilli powder provides a mild, fruity heat rather than an intense spice, making it a crowd-pleaser for all ages. For the best flavour, serve the cobs piping hot so the seasoned butter can soak into every crevice of the corn.
