This baked penne with farmhouse cheddar and leeks is the ultimate vegetarian comfort food. By slowly sweating a generous amount of leeks in butter, you create a sweet, mellow base that perfectly balances the sharp, salty tang of mature cheddar cheese. The addition of a little mustard and hot pepper sauce provides a subtle hum of heat that cuts through the rich, velvety sauce, ensuring every mouthful is full of depth and flavour.
Ideal for a midweek family supper or a casual weekend gathering, this pasta bake is wonderfully practical as it can be assembled a few hours before you need to eat. Serve it alongside a crisp, bitter leaf salad or some steamed seasonal greens to balance the richness of the farmhouse cheese. It is a reliable, crowd-pleasing dish that brings a sophisticated touch to the classic macaroni cheese format.
