Cos and Rocket Salad with Toasted Seeds

This vibrant romaine and rocket salad is a masterclass in texture and minimalist flavour. By combining the crisp, structural leaves of romaine with the peppery bite of baby rocket, you create a refreshing base that perfectly complements the zesty lemon dressing. The highlight of this dish is the homemade seed sprinkle, where toasted sesame and crushed coriander seeds provide an aromatic crunch and a nutty depth that elevates the simple greenery.

As a versatile vegan side dish, this salad pairs beautifully with grilled vegetables, Mediterranean mains or a light summer pasta. The seeds and dressing can be prepared up to eight hours in advance, making it an excellent choice for stress-free entertaining or a quick, healthy lunch. It is a light yet satisfying way to add more leafy greens to your daily routine.

How to make Cos and Rocket Salad with Toasted Seeds

Combine all seeds in heavy small skillet. Add large pinch of salt. Cook over low heat until white sesame seeds are pale golden, stirring occasionally, about 8 minutes. Using potato masher, press mixture in skillet until coriander seeds are coarsely crushed.

Place lemon juice and peel in small bowl. Whisk in olive oil. Season dressing with salt and pepper. (Seeds and dressing can be made 8 hours ahead. Let stand at room temperature.)

Combine cos and rocket in large bowl. Add dressing and half of seeds; toss to coat. Sprinkle with remaining seeds and serve.
