This vegan miso kale Caesar salad offers a vibrant, plant-based twist on the classic recipe, swapping heavy mayonnaise for a creamy tahini and miso dressing. The combination of earthy kale and sweet raw corn provides a wonderful contrast to the umami-rich dressing, while the daikon radish adds a refreshing crispness. Massaging the kale is a simple but essential step, as it softens the hardy leaves and allows the deep savoury flavours to penetrate for a more tender bite.
Perfect as a light lunch or a nutrient-dense side dish, this salad is packed with healthy fats from the avocado and hemp seeds. It is a brilliant example of modern Japanese-fusion cooking that fits seamlessly into a balanced lifestyle. Serve it alongside grilled tofu or enjoy it on its own for a satisfying, wholesome meal that feels both indulgent and nourishing.
