This vibrant herb salad with pickled red onion and preserved lemon is a masterclass in balancing textures and bold flavours. As a refreshing vegan side dish, it relies on the punchiness of fresh mint, parsley, dill and coriander to create a sophisticated base. The addition of preserved lemon provides a unique salty-citrus depth that perfectly complements the bright, acidic crunch of home-pickled onions. It is an exceptionally aromatic dish that works beautifully as a palate cleanser or a zesty accompaniment to roasted vegetables.
Ideal for alfresco dining or as a modern addition to a weekend lunch, this salad is as nutritious as it is beautiful. By using whole leaves and tender stems, you maintain a rustic yet elegant appearance that celebrates high-quality seasonal produce. Simply dress with a high-quality olive oil just before serving to allow the natural oils of the herbs to shine. It is a fantastic contemporary option for anyone looking to elevate their plant-based repertoire with minimal effort.
