Creamy Potato Salad with Lemon and Fresh Herbs

This vibrant vegan potato salad offers a refreshing twist on a classic side dish, replacing heavy dressings with a bright, herb-flecked alternative. By using baby red potatoes and a trio of fresh parsley, basil, and dill, the salad gains a sophisticated flavour profile that is further lifted by a touch of zesty lemon. It is an excellent choice for those seeking a lighter, plant-based option that doesn’t compromise on the traditional creamy texture we all enjoy.

Perfect for summer barbecues, garden picnics, or as a healthy meal-prep staple, this versatile dish can be prepared up to eight hours in advance. The addition of crunchy celery and spring onions provides a satisfying contrast to the tender potatoes, making it a crowd-pleasing accompaniment to grilled vegetables or meat-free burgers.
