This elegant lemon and dill sauce is a versatile addition to any cook's repertoire. Belonging to the low-sugar category, it relies on the natural acidity of citrus and the aromatic depth of dry white wine to create a sophisticated flavour profile. The sauce is finished with fresh herbs, providing a bright, herbaceous lift that cuts through the richness of the butter beautifully.
Perfect for a midweek supper or a formal dinner party, this silky sauce pairs exceptionally well with grilled salmon, pan-seared scallops, or even steamed asparagus. By using the classic mounting technique with chilled butter, you achieve a professional, glossy consistency that rivals any high-end bistro. It is a simple yet effective way to elevate fresh seafood and seasonal vegetables.
