Planked Salmon with Coconut Rice

This cedar plank salmon with coconut rice is a sophisticated yet simple dish that brings a wonderful depth of flavour to your midweek dining. By roasting the salmon on a pre-soaked cedar wood plank, the fish stays incredibly moist while absorbing a gentle, smoky aroma that perfectly complements the sweet maple and tangy lime glaze. It is a striking way to serve seafood that feels like a restaurant-quality treat made in your own kitchen.

As a high-protein meal, this recipe is as nourishing as it is delicious. The jasmine rice is simmered in a blend of coconut milk and savoury stock, resulting in a creamy, fragrant accompaniment that balances the richness of the fish. It is an excellent choice for a healthy evening meal or a weekend dinner party when you want to impress with minimal effort.
