Pho

This aromatic chicken pho is a beautifully light yet satisfying dish that brings the fragrant flavours of Vietnam to your kitchen. Infused with star anise, cloves and fresh ginger, the delicate broth provides a savoury base for tender chicken breast and colourful vegetables. It is an excellent choice for those seeking a nutritious, warming meal that feels indulgent while remaining surprisingly low in fat.

As a high-protein dinner, this recipe is perfect for post-workout recovery or a healthy family meal. The combination of rice noodles, crunchy mangetout and fresh herbs creates a wonderful contrast of textures. Serve it steaming hot with a squeeze of fresh lime to brighten the spices and bring all the fresh elements together for a balanced, wholesome bowlful.
