Meat Loaf, Baby Rocket, and Russian Dressing on Whole-Grain Bread

This meatloaf and baby rocket sandwich is a satisfying way to repurpose leftovers into a nutritious, high-protein lunch. By pairing hearty slices of meatloaf with an easy, two-ingredient Russian dressing, you create a complex flavour profile that feels far more indulgent than a standard midday meal. The peppery notes of the fresh rocket add a bright contrast to the savoury beef, while the whole-grain bread provides a nutty base and plenty of fibre.

Ideal for busy weekdays or a packed lunch, this sandwich is both robust and portable. The combination of protein and slow-release carbohydrates makes it an excellent choice for maintaining energy levels throughout the afternoon. For the best results, use thick slices of shop-bought or homemade meatloaf and give the bread a light toast to ensure it holds up beautifully against the creamy dressing.
