Fried Egg and Sausage Ciabatta Breakfast Pizzas

These fried egg and sausage ciabatta breakfast pizzas offer a sophisticated and filling twist on the classic morning roll. This high-protein dish replaces traditional dough with crusty ciabatta, which provides a sturdy base for melted Monterey Jack cheese, savoury Italian-style sausage, and a vibrant spring onion oil. It is a rustic, communal meal that brings a touch of Mediterranean flair to the breakfast table through its use of simple, high-quality ingredients.

Ideal for a weekend brunch or a post-workout recovery meal, these pizzas are designed to be shared. The combination of spicy sausage and perfectly fried eggs with golden, runny yolks creates a rich sauce that soaks into the toasted bread. Served hot from the oven, they provide a balanced balance of textures and flavours that will satisfy any appetite while keeping you fuelled for the day ahead.

  • 1 loaf ciabatta bread (about 450g )

  • 240ml chopped spring onions

  • 8 tablespoons olive oil, divided

  • 230g sliced hot pepper Monterey Jack cheese

  • 450g spicy or sweet Italian sausages, casings removed

How to make Fried Egg and Sausage Ciabatta Breakfast Pizzas

Preheat oven to 232°C. Cut bread horizontally in half. Place bread halves, cut side up, on separate baking sheets. Mix onions and 6 tablespoons oil in small bowl. Season with salt and pepper. Reserve 2 tablespoons onion oil and spread remaining onion oil over bread. Top with cheese.

Sauté Italian sausages in large nonstick skillet over medium-high heat until cooked through, breaking up with spoon, about 7 minutes. Divide sausage among bread halves. Bake pizzas until cheese melts and bread begins to crisp, about 10 minutes.

Meanwhile, heat 1 tablespoon oil in each of 2 large skillets over medium-high heat. Crack 4 eggs into each skillet. Sprinkle with salt and pepper. Cook 2 minutes. Remove from heat and let eggs stand in skillets while pizzas bake.

Arrange 4 eggs atop each pizza. Spoon reserved onion oil over eggs. Cut each pizza between eggs into 4 pieces.
