This aromatic curried prawns dish is a vibrant addition to a healthy recipe repertoire, offering a sophisticated balance of sweet and savoury notes. By combining succulent prawns with fresh mango strips and a hint of sriracha heat, this meal delivers a complex flavour profile that feels indulgent yet remains light. The addition of creamy coconut milk and traditional fish sauce creates a fragrant sauce that perfectly coats the tender potato and crisp green peppers.
As a high-protein option, this dish is excellent for those looking for a nutritious, filling dinner that can be prepared in under twenty minutes. It is particularly well-suited for busy weeknights when you want a homemade meal that does not compromise on quality or taste. Serve it alongside a small portion of steamed rice or enjoy it on its own for a lighter alternative that is packed with fresh herbs.
