These chicken satay bites provide a fresh, high-protein twist on a classic takeaway favourite. By combining tender shredded chicken with a zesty, homemade peanut dressing, you create a snack that is both deeply satisfying and nutritious. The pitta triangles are toasted until shards of golden crispness, providing the perfect base for the aromatic ginger and lime-infused topping.
Ideal as a post-workout recovery snack or an elegant party appetiser, this recipe is incredibly versatile. Using dark meat chicken ensures a succulent texture, while the fresh coriander and hot sauce add a vibrant kick. These bites are best served immediately while the chicken is warm and the pitta base remains perfectly crunchy for your guests.

How to make Chicken Satay Bites
Put oven rack in middle position and preheat oven to 204°C.
Tear each pita wedge at fold to form 2 triangles. Brush rough sides of pita triangles with 1 tablespoon oil and toast on a baking sheet until crisp and golden, 8 to 10 minutes. Pulse peanut butter, chopped coriander, lime juice, water, ginger, Tabasco, salt, and remaining tablespoon oil in a food processor until combined well but still slightly chunky. Toss chicken with peanut sauce and season with salt. Mound on pita toasts and top with coriander leaves.
