Tarragon-Coriander Salsa Verde

This vibrant tarragon and coriander salsa verde is a fresh, aromatic twist on the classic Mediterranean green sauce. By swapping traditional parsley for citrusy coriander and anise-scented tarragon, this version offers a bright and complex flavour profile. The addition of lime juice and a hint of jalapeño provides a sharp, spicy kick that cuts beautifully through richer dishes, while the extra-virgin olive oil ensures a silky, luxurious finish.

As a heart-healthy condiment, this sauce is naturally low in saturated fat and packed with fresh herbs and antioxidants. It is an incredibly versatile addition to your repertoire, working equally well spooned over grilled sea bass, roasted new potatoes or even as a dressing for a simple grain salad. Prepared in minutes, it can be made ahead to allow the savoury notes of caper and anchovy to meld perfectly.
