Sheet-Pan Roasted Squash and Feta Salad

This roasted squash and feta salad is a vibrant celebration of texture and flavour, making it a wonderful choice for a heart-healthy lunch or a light evening meal. The natural sweetness of the roasted squash pairs beautifully with the salty, softened feta and the pleasant bitterness of the radicchio leaves. By roasting everything on a single baking tray, the bread cubes soak up the delicious juices, transforming into golden, savoury croutons that add a satisfying crunch to every bite.

Perfect for those seeking a nutritious yet comforting dish, this salad is packed with wholesome ingredients and healthy fats from the extra-virgin olive oil. The simple dressing of sherry vinegar, honey, and fresh thyme provides a bright acidity that cuts through the richness of the cheese. Serve it warm from the oven for a sophisticated homemade meal that is as effortless as it is elegant.
