Green Bean and Tuna Salad with Basil Dressing

This vibrant green bean and tuna salad is a Mediterranean-inspired dish that prioritises fresh flavours and nutritional balance. As a heart-healthy lunch or light supper, it combines the crunch of blanched green beans with creamy white beans and protein-rich shop-bought tuna. The star of the show is the homemade basil and shallot dressing, which provides a zesty, herbaceous lift that ties the savoury components together beautifully.

Quick to prepare and naturally gluten-free, this satisfying salad makes excellent use of larder staples like tinned pulses and jarred tuna. Serve it on a large platter for a communal family meal, or pack it into containers for a nutritious work lunch. The addition of fresh parsley and salty capers ensures every mouthful is packed with texture and a distinct, sophisticated flavour profile.

How to make Green Bean and Tuna Salad with Basil Dressing

Combine shallot, vinegar, and 1 teaspoon salt in a blender jar. Let sit 5–10 minutes to lightly pickle.

Meanwhile, cook green beans in a large pot of boiling salted water until crisp-tender, about 4 minutes. Drain, then run under very cold water until cool to the touch.

Add basil, oil, lemon juice, and pepper to shallot mixture and blend until mostly smooth. Pour dressing into a large bowl. Add green beans, lettuce, white beans, parsley, and capers and toss with your hands to coat. Add tuna and gently toss to combine. Transfer salad to a platter.
