Ingredients for Viet-Mex Fajita Rolls

  • 900g grilled fajita meat of your choice, sliced in thin strips

  • 1 cup coriander sprigs

  • 1 large tomato, chopped

  • 1 avocado, peeled and sliced

  • 4 spring onions, chopped

  • 80g thin-sliced raw carrot strips

  • 120ml thin-sliced jicama strips

  • 40g dry-roasted peanuts, chopped

  • 2 limes, cut into wedges

  • 1 head of cos lettuce, washed and dried, for wrappers

  • 240ml salsa of your choice

How to make Viet-Mex Fajita Rolls
