This elegant sautéed chicken dish offers a sophisticated blend of Mediterranean flavours, making it an ideal choice for a light lunch or a nutritious dinner. The warm tomato-saffron vinaigrette provides a fragrant, golden dressing that perfectly complements the peppery bite of the frisée leaves. By using white balsamic vinegar and extra-virgin olive oil, the recipe achieves a refined balance of acidity and richness without being heavy.
As a diabetes-friendly option, this protein-rich meal is naturally low in carbohydrates and contains heart-healthy fats. The inclusion of fresh thyme and hot paprika adds depth and a subtle heat, ensuring every bite is full of character. Serve this vibrant salad on its own for a healthy midweek meal, or offer it to guests as a stylish, low-sugar starter that doesn't compromise on flavour.
