These mini quiches in prosciutto cups are a clever, low-carb alternative to traditional pastry-based tarts. By using thin slices of cured ham as the base, you achieve a wonderfully salty, crisp exterior that perfectly complements the soft, savoury egg filling. Infused with aromatic rosemary and tangy black olives, they offer a sophisticated Mediterranean flavour profile while remaining surprisingly light.
As a diabetes-friendly snack or breakfast option, these protein-rich bites are excellent for managing blood sugar levels without sacrificing taste. They are quick to prepare and work beautifully as part of a healthy brunch spread or as a portable mid-morning snack. Enhance the presentation by serving them on a wooden board with a few extra sprigs of fresh rosemary for a fragrant finishing touch.
