New Orleans Prawns, Okra, and Tomato Sauté

This vibrant New Orleans prawn, okra and tomato sauté brings the bold, spicy flavours of the Deep South to your kitchen. A nutritious choice for those looking for diabetes-friendly recipes, this dish relies on a dark, savoury roux and aromatic Cajun spices rather than heavy fats. The combination of succulent prawns, tender okra and bursting cherry tomatoes creates a textured meal that is both light and deeply satisfying.

Traditionally served over rice, this stir-fry is equally delicious on its own or paired with a lighter alternative like quinoa for a heart-healthy dinner. The addition of crispy smoked bacon and fresh spring onions provides a wonderful contrast to the sweet prawns. It is a quick-to-prepare midweek meal that delivers a sophisticated punch of flavour without the fuss.

Stir in remaining 1 1/2 teaspoons Cajun seasoning. Cook 1 minute. Add clam juice and allspice. Boil until sauce is thick, stirring often, about 3 minutes. Add prawns.
