These mussels in tomato broth offer a sophisticated yet simple way to enjoy fresh seafood at home. This light, Mediterranean-style dish relies on the natural sweetness of quality mussels paired with a hit of garlic and a subtle warmth from dried chilli. By simmering the shellfish in a vibrant base of white wine and tomato, you create a rich, savoury broth that perfectly complements the briny flavour of the sea without the need for heavy fats.
As a diabetes-friendly option, this recipe is naturally low in carbohydrates and high in lean protein, making it an excellent choice for a healthy midweek dinner or an elegant weekend starter. Serve the mussels in wide bowls to capture all the delicious juices. For a complete meal, pair them with a large green salad or a small portion of crusty wholemeal bread to soak up the fragrant sauce.
