Moroccan Chicken with Green Olives and Lemon

This fragrant Moroccan chicken with green olives and lemon is a beautiful example of how North African spices can transform simple ingredients into a sophisticated meal. By using skinless chicken and heart-healthy olive oil, this dish remains low in saturated fat while delivering a complex profile of cumin, ginger, and cinnamon. The preserved-style lemon wedges and salty olives provide a bright, savoury contrast to the tender, spiced meat.

As a diabetes-friendly main course, this recipe prioritises lean protein and aromatic herbs over heavy sugars or fats. It is a wonderful choice for a healthy midweek dinner or a relaxed weekend gathering. Serve it alongside a portion of wholemeal couscous or steamed cauliflower rice to soak up the zesty, spiced sauce while keeping the meal nutritionally balanced.
