Mediterranean Microwave Fish With Green Beans, Tomatoes, and Olives

This Mediterranean microwave fish is a vibrant and nutritious choice for a midweek meal when time is short but you still want a wholesome dinner. By gently steaming white fish fillets over a bed of fresh green beans, cherry tomatoes, and briny Kalamata olives, you create a sophisticated dish with minimal effort. The combination of garlic, thyme, and a splash of dry white wine builds a light, aromatic sauce that perfectly complements the delicate texture of the flounder or tilapia.

As a diabetes-friendly recipe, this dish is naturally low in carbohydrates and high in lean protein, making it an excellent addition to a balanced diet. The use of the microwave ensures the vegetables retain their crunch and the fish stays moist without the need for excessive fats. Serve this simple, one-dish wonder on its own for a light supper or with a small portion of wholemeal couscous to soak up the savoury juices.
