Herbed Balsamic Chicken with Blue Cheese

This elegant herbed balsamic chicken with blue cheese offers a sophisticated balance of bold flavours while remaining remarkably simple to prepare. The lean chicken breasts are marinated in a tangy balsamic glaze, which tenderises the meat and provides a deep, savoury base that pairs perfectly with the fragrant herbes de Provence. The addition of creamy blue cheese adds a touch of indulgence without compromising the nutritional profile of the meal.

As a diabetes-friendly main course, this dish is high in protein and low in carbohydrates, making it an excellent choice for a healthy evening meal. Serve it alongside a crisp green salad or roasted Mediterranean vegetables for a light yet satisfying dinner. Transitioning easily from a midweek staple to a weekend dinner party favourite, it is a versatile addition to any healthy recipe collection.
