Herb Roasted Lamb Chops

These herb-roasted lamb chops are a masterclass in simple, seasonal cooking. Infused with a fragrant blend of fresh rosemary, thyme and garlic, the meat is first seared in a frying pan to create a savoury crust before being finished in the oven for a tender, succulent result. The combination of high-quality extra-virgin olive oil and fresh herbs ensures a depth of flavour that perfectly complements the natural richness of the lamb without the need for heavy sauces.

As a diabetes-friendly main course, this dish is naturally high in protein and fits seamlessly into a balanced, low-carbohydrate lifestyle. Serving these chops alongside a tray of roasted Mediterranean vegetables or a crisp green salad makes for a sophisticated yet effortless midweek meal. It is a reliable recipe for anyone looking for a healthy, homemade dinner that feels like a special occasion treat.

  • 2 cucharaditas de sal kosher gruesa

  • 2 cucharadas de aceite de oliva virgen extra, divididas

  • 6 1 1/4-inch-thick lamb loin chops

How to make Herb Roasted Lamb Chops

Mix first 4 ingredients and 1 tablespoon olive oil in large bowl. Add lamb; turn to coat. Let marinate at room temperature at least 30 minutes and up to 1 hour.

Preheat oven to 204°C. Heat remaining 1 tablespoon olive oil in heavy large ovenproof skillet over high heat. Add lamb; cook until browned, about 3 minutes per side. Transfer skillet to oven and roast lamb chops to desired doneness, about 10 minutes for medium-rare. Transfer lamb to platter, cover, and let rest 5 minutes.
